Lechon or roasted pig
is a favorite food in the Philippines consisting of roasted whole body of the pig complete with head, feet and tail but devoid of the internal organs and pierced from its rear to the mouth using a bamboo trunk.
With the evolution of anything in this world
comes the evolution of the Lechon. What used to be the whole pig roasted to perfection is delightfully reduced to a belly doing away with the head and the tail. It's a completely different Lechon setup because its shape is like a longaniza or Spanish sausage making it more attractive to food lovers. And in a very short time, its popularity was immense that a lot of businesses engaged in Lechon Belly. Some companies even went further promoting Lechon Belly to a whole new level: it's completely deboned and can be eaten without that awful mess of greasy leftovers. A lot of people favored for this new Lechon trend because every bit of the roast is consumed and no part is wasted. Usually, the head, the feet and all the bony parts will just go to the dogs or left to rot in the garbage but weigh heavily on the scale making the price go up. But there's no more waste this time and every gram paid fills the human stomach and not the stomach of animals. The size of the Lechon Belly is ideal for small and big occasions whatever they may be. And the price is not too high and just a little higher than the common Lechon but without the wastes and greasy mess of the bones and the bony parts. Kuzina Guadalupe Spicy Boneless Lechon Belly is based in Cebu City, the Queen City of Southern Philippines and expanding gradually in the coming years to any other part of the country.
Cooking is a slow rolling process
using charcoal or wood fire strategically placed right below the prepared pig to cook evenly throughout with its skin brushed with seasoning from time to time to create the best crisp. Roasted pigs abound int fiestas and festivals and in every family occasion in the Philippines enhancing the happy and festive mood. They are always the centerpiece of the party and one that clearly shows a celebration is going on. Birthdays, weddings, anniversaries or common family gatherings and get-togethers can never be as alive and joyful without the mouth-watering Lechon or roasted pig. The sight of the reddish, roasted pig skillfully placed in the center of the table will glue anybody's eyes and can never let go. And just imagining the crisp of its skin, the crackling sound it makes with every bite can't stop everyone to attack the table immediately. And even if everybody knows about the fats and all the harmful elements in every gram, indulging in Lechon will always be there as it has always been for so many years. Even if it's known to cause hypertension or high blood pressure and other ailments or diseases, nobody is afraid to take a biteful because everybody just thinks of the unique taste and flavor not found in other pork dishes.
